Start here: 20 g medium coffee · 320 g water · water around 93–96°C / 200–205°F · roughly 3–4 minutes.

The method

  1. Rinse the paper filter with hot water and discard the rinse. Add coffee and level the bed.
  2. Pour 40 g water over the grounds and wait 30–45 seconds.
  3. Pour slowly in small circles until you reach 320 g total water. Keep the bed covered without filling to the rim.
  4. Let the water drain, remove the filter, and swirl the brewed coffee before serving.

Adjust: A sour, thin cup may benefit from a slightly finer grind. A dry, harsh cup may benefit from a coarser grind. Timing varies by brewer and filter.
